                 The hospital&#039;s catering and hospitality manager, Michael Eastham, introduced the VARIOCART to support his team of 65 staff, delivering up to 2,500 patient meals per day.  When Cyrus Todiwala moved his iconic Café Spice Namasté to the London Docklands in 2022, he knew that the change would bring both benefits and challenges after 25 years of trading in Whitechapel. 
 Café Spice Namasté now offers capacity for 90 diners across two floors in a 2,500 sqm restaurant. However, the key to the operation lies in a separate storage facility in an adjacent unit, kitted out with the innovative Easy Rider system. 
 The new venue provides a light-filled arena for Cyrus’s vibrant, neighbourhood restaurant and cooking academy at the Royal Albert Wharf, overlooking the Thames with views of the Canary Wharf skyline and London City Airport. 
 However, it is a smaller site than the old location, which had built a cult following over more than two decades. With bulk ingredients to manage, not to mention storing equipment and accessories to cater for 150 people off-site, in addition to the restaurant, Cyrus knew that storage space in particular could be a challenge – until he was introduced to the Hupfer Easy Rider racking system. 
 Cyrus Todiwala said: “Storage is one of the biggest challenges in a daily kitchen routine. It’s always a challenge to keep things fresh, properly stored and well stocked whilst making sure everything is visible to us. 
 Cyrus initially put all his existing racks in the middle of the room, but it was cramped with ingredients inaccessible or difficult to find. 
  Hupfer’s Easy Rider provided the solution.  
 Café Spice Namasté has installed a total of 12 Easy Rider racking units in dry stores and a further 14 static racks in cold store areas. Installation was completed in under five hours with no need to drill holes in the floor and no need for special tooling. 
 With Easy Rider, shelves are positioned on traversable rails, which saves space because there is no need for walkways as users slide the shelving for easy access. The units join together with a clamp for safety, which can be easily unlocked when required. At Café Spice Namasté, the system saves at least one third of the space that would be required for fixed shelving. 
 “With Hupfer’s Easy Rider system, I can store almost a ton of food including 500kg of rice, plus onions, flour and sugar on one sturdy shelving unit and move it with just one finger. And, I know it’s not going to break,” Todiwala says. 
 “It gives us so much flexibility. The shelving can be taken out for cleaning and easily slides back in, which is not always possible with fixed shelving. We even moved the whole system by four feet because we wanted to put freezers along the wall. And when it’s all pushed back, it gives a real open space feel in the storage areas.” 
 Hupfer makes work flow 
 Todiwala has used Hupfer equipment since he first opened in London in 1995. He adds: “I was told back then if you want to buy the best, you buy Hupfer. And it’s true. When I first looked at the product, I wasn’t sure it would be as strong as the racking I was used to, until my first storeroom was converted to Hupfer. 
 “Then I realised how practical it is. It’s German-built, so practicality comes first – then design, aesthetics, and everything else. It’s not the cheapest, but you’re paying for quality that will last.

                  Caring for the environment has never been more important, and one of the biggest issues we still face today is the wastage of food. According to the Waste and Resources Action Programme, food waste amounts to around £19 billion per year. What’s even more worrying is that 6.4 million tonnes could have been eaten, which is the equivalent of over 15 billion meals.  
  Even though these numbers are high, there is so much we can do to make a difference and reduce this waste. If you run a commercial kitchen and are looking to make some change to the amount of food you’re wasting, take these tips on board to create a more sustainable space and to help the environment.  
  Food deliveries and stock management  
  Over ordering is one of the big reasons for food waste. Reassessing the amount of food you need in your deliveries by reviewing your menu can help to reduce this excess food. You should also put measures in place to ensure that any older food within its use by date is used first before newer food items.  
  Review your menu  
  From the types of food on your menu to the portion sizes you’re currently offering to your customers, reviewing your menu can help to cut down on unnecessary food and ensure clean plates return to your kitchen, instead of food being left due to customers being overfaced.  
  Donate leftover food in storage

                 Maintaining proper sterile storage conditions is essential to ensure no damage is caused to equipment and sterile packages while being stored. Having insufficient space for sterile equipment is a common issue, and most medical departments are limited in the storage space they can provide. Because of this, space can quickly become filled, meaning different departments may need to rethink their spaces and procedures. 
 As with all sterile packages, it’s important to ensure that they keep intact until a product needs to be used. With any sterile storage area, different policies and procedures need to be created and staff need to be trained to keep sterile areas and equipment as safe and secure as possible. 
  How can damage to sterile packages occur?  
 Sterile packages and equipment shouldn’t be stored next to moisture, such as sinks or running water. If it finds its way into a sterile package or condensation occurs from storing packages at incorrect temperatures, then this will affect the sterility of the equipment. The same can be said about soiled or stained packages. Packages with visible stains should be considered contaminated and disposed of. 
 As well as this kind of damage, there is also the physical damage from being incorrectly stored. Heavy packages being stacked on top of one another or stored carelessly can cause damage that could force departments to dispose of large batches of sterile equipment and supplies. 
  Preventing physical damage to sterile packages  
 Improper handling of packages or incorrect storage procedures, such as compression of packages or items being packed tightly together on shelves, can expose them to the open air, as well as expose its contents to bacteria and dust. Any holes or tears in sterile packages because of the inability to store them correctly means they will have to be disposed of. 
 To reduce the likelihood of this happening and to prevent unnecessary waste, it’s important to ensure that you follow some strict procedures: 
 
 Make sure storage carts or shelving is not overloaded. 
 
 
 Try not to over-handle sterile packages to avoid accidental rips and tears. 
 
 
 Ensure you consider any use by dates on sterile equipment

                 One thing we know about the pandemic is just how much it’s changed the world and how it will continue to change how we do things for the rest of our lives. However, despite the success of the vaccine roll out and the effectiveness of previous lockdown measures, the future of living with COVID is something we’re yet to fully understand. 
 Medical professionals have stated that the virus is here to stay, and we have to learn to live with it and control it. But what will this entail? How will hospitals and medical establishments be changing their processes to settle into a future we didn’t expect? Here are just a few of the things we can expect for the future. 
  Vaccine boosters  
 For the time being, vaccine boosters will be required each year to help keep on top of the virus and prevent more serious, hospitalised cases. Not only will this help to protect individuals and can allow us to continue with our day to day activities, but it will also help hospitals to cope with patient numbers. 
 Recent news reports state that there are talks of creating a pill or inhaler as an alternative to a vaccine in future to make it even easier to stay protected and to keep production costs low, although this is still in very early stages. 
  Delivering routine care  
 Medical professionals in hospital and care settings continue to face significant challenges in delivering routine care and restoring their usual services, but as the vaccine rollout continues, the rate of patient admissions with COVID-19 is slowing. 
 Now COVID patient admissions are starting to stabilise, routine care and surgeries are going ahead, with some patients finally getting the appointments they need after well over a year of uncertainty. This could be due to a fear of being exposed to the virus or if local healthcare providers had to temporarily limit the services they offer. 
 This shows that many people may not be as actively engaged in their health as they were pre-COVID, or simply haven’t got around to rebooking. In a post-pandemic world, we need to encourage people to rebook appointments and stop delaying care to prevent serious healthcare issues later down the line.

 With such an unexpected direction for the world in the last couple of years, medical spaces need to keep up with changes to ensure they are safe and protect staff and patients as much as possible going forward. To do this, many hospitals and care sector buildings may need to be redesigned.
